Mitch Tonks is a respected voice in UK fishing and sustainability, as well as an acclaimed restaurateur, chef and author of seven cookbooks. Growing up in Weston-Super-Mare, he developed a passion for British seafood, which led to his first successful fishmongers, cookery school and café in Bath in 1995. Over 25 years, he has championed British fishing, supported the Brixham Fish Market, and promoted sustainable seafood.

In 2008, Mitch co-founded The Seahorse in Dartmouth with Matt Prowse (now led by Chef Patron, Ben Tonks), creating a welcoming space to enjoy local seafood. He opened the first Rockfish restaurant in 2010, and the Rockfish group now operates 12 locations across the South West, with a 13th Rockfish site to open in late 2025.

Located inside the UNESCO World Heritage Galle Fort, the historic Galle Fort Hotel is housed in a Dutch mansion that dates back 300 years. Through heritage restoration, the building’s Dutch walls and facade were conserved as authentically as possible.

In its new look, the Galle Fort Hotel features 11 luxurious suites with varying themes and decor, all around a widely Instagrammed frangipani-lined courtyard.
