Hix
Mark Hix, celebrated as one of Britain’s foremost restaurateurs, boasts unparalleled expertise in ingredients’ provenance. An award-winning author with 12 cookbooks including the latest “Hooked”, he shared fishing tales from childhood to the present. Mark was The Independent on Saturday’s good writer for 14 years and now contributes to The Telegraph, Dorset Magazine and Marshwood Vale. Appointed Director of Food and Drink at the London’s Groucho Club, He left Chef Director at Caprice Holdings in 2007 to establish HIX Restaurants which sadly closed in 2020 due to Covid-19.
Mark opened The Oyster & Fish House in 2020 and launched HIX Oyster & Fish Trust during lockdowns. Despite challenges, he opened The Fox Inn in 2020 closing in July 2022. Awarded an MBE in 2017 for hospitality contributions, Mark continues to share his culinary insights in a weekly Telegraph recipe column.

Located inside the UNESCO World Heritage Galle Fort, the historic Galle Fort Hotel is housed in a Dutch mansion that dates back 300 years. Through heritage restoration, the building’s Dutch walls and facade were conserved as authentically as possible.
In its new look, the Galle Fort Hotel features 11 luxurious suites with varying themes and decor, all around a widely Instagrammed frangipani-lined courtyard.
